This is not your usual provolone.  Artisanal's choice of an Italian provolone cheese is the finest in the world.  Aged for 36 months by world-class Italian cheese affineur Luigi Guffanti, this full fat cheese made from pasteurized cow's milk has a hard, elastic paste with a yellow intensity.  This cheese is very rich and flavorful, piquant with aromas developed in the ripening period.
